Dharwad Karchikayi
Karchikayi, also known as Karjikai or Karanji, is a popular sweet pastry or dumpling from India, particularly prominent during festivals like Diwali and Holi. It’s a deep-fried pastry filled with a sweet, aromatic stuffing.
The preparation involves making a dough from all-purpose flour (maida), water, and a bit of oil. The dough is kneaded until smooth and then rested to ensure it’s pliable.
For the filling, a mixture is prepared using grated coconut, powdered jaggery or sugar, finely chopped nuts like almonds, cashews, and raisins. This mixture is flavored with cardamom powder or nutmeg and sometimes a pinch of saffron for added fragrance and taste.
