“Masala Bundi” refers to a spiced version of Bundi, a popular Indian snack made from chickpea flour (besan). Bundi itself is made by frying chickpea flour batter into small, crispy, and round droplets.
To prepare Masala Bundi Kalu, the traditional Bundi preparation is taken a step further by adding a masala or spice blend to the basic Bundi.
The process begins by making the chickpea flour batter, which involves mixing besan with water to create a smooth, runny batter. This batter is then poured through a perforated spoon or a special utensil called a ‘bundi jhara’ into hot oil, forming tiny droplets, and frying them until they turn golden and crispy.
