Rava Laddu, also known as Rava Unde or Semolina Ladoo, is a popular sweet treat from India, commonly made during festivals, celebrations, or as a quick dessert.
The preparation involves using roasted semolina or sooji (also known as rava), which is dry-roasted until it emits a nutty aroma and turns slightly golden. This roasted semolina forms the base of the laddu.
In a separate pan, ghee (clarified butter) is heated, and cashew nuts, raisins, and sometimes grated coconut are lightly fried until they turn golden brown. Then, the roasted semolina is added to this mixture and stirred well.
Once combined, powdered sugar or jaggery (according to preference) is added to the mixture. Cardamom powder for flavoring is also added at this stage. The mixture is then allowed to cool slightly so that it can be handled comfortably
